    It has been scientifically proven that spices prevent our food from spoilage and thus, north Indian foods tend to be so spicy. Bacteria and foodborne pathogens cannot survive in a hot environment, which is provided by spices. Countries with a hotter climate have comparatively spicy cuisine. Is Indian food actually spicy? It is simply untrue that Indian food is always hot and spicy. While spices are used in Indian cooking, they are not what makes food spicy. As for chiles (which add the heat to a dish), they are a matter of preference and can easily be omitted from most recipes.

    Chicken Adobo with Coconut Milk (Adobo sa Gata) one of the most underrated ULAMS on the planet! Mapapadami ako ng kain nito! In the Philippines, adobo is both a beloved cooking technique and a tangy marinated and braised meat dish. It's akin to the French coq au vin, but with a flavor all its own. You can use different types of meat or fish, but chicken is a favorite. Serve with steamed or fried rice. DirectionsInstructions Checklist Step 1 Whisk together vinegar, soy sauce, coffee, and brown sugar in a bowl until sugar is dissolved. Step 2 Heat coconut oil in an 8-quart Dutch oven over high heat. Working in batches, add chicken, skin sides down first, and cook until golden brown and crispy, about 4 minutes on each side. Transfer to a plate. Step 3 Drain all but 2 tablespoons drippings from Dutch oven and return to heat. Add chopped garlic and fry until light brown and crisp, about 3 minutes. Remove to a small bowl, leaving drippings in the pot. Add shallots and minced garlic; cook, stirring constantly, until shallots are translucent and garlic has browned, about 5 minutes. Step 4 Put peppercorns and bay leaves in a square of cheesecloth tied with kitchen string. Add browned chicken quarters, vinegar mixture, and spice bundle to Dutch oven. Bring to a boil; boil for 1 to 2 minutes. Reduce heat, cover, and simmer for 30 minutes. Add shiitake and oyster mushrooms, coconut cream, and turmeric. Cover and simmer until chicken is tender, 15 to 20 minutes more. Step 5 Cut leg quarters in half at joint or pull meat from bones and shred. Remove spice bundle and skim fat from sauce. Return chicken to the sauce. Sprinkle with green onions and the fried garlic.

    Homemade “Pringles” Ingredients: 1 c warm water 1/4 tsp salt 1 c instant mashed potatoes (powdered kind works better than the flake or pearl kind) 1 c rice flour 1 Tbsp cornstarch 1/4 tsp of baking powder Peanut or coconut oil for deep frying Instructions: Dissolve the salt in the water, then add to dry ingredients. Mix into stiff dough. Pass dough through pasta machine at the lowest setting (I’ve never been able to make these thin enough rolling by hand). Cut the flatten dough into 2” squares or use a sharp cookie cutter lightly greased with cooking spray to make different shapes. In a heavy skillet or kettle, heat oil to 350-375F (175-190C). Flash fry chips 10-15 seconds until crisp. Oven method: preheat oven to 450F (232C), arrange chips on a cookie sheet covered with parchment paper, spritz tops with cooking spray, place in top rack of oven and bake for 2-3 minutes until crisp. Alt: Mix cooked potatoes and rice in blender/food processor with the cornstarch, baking powder & salt to make the dough (you shouldn’t need any water). Working with 1/3 of the dough, knead together 8-10 strokes before pressing. The dough becomes workable and cohesive by folding and re-pressing it 4-5 times. Press dough to the thinnest setting… Cut into “chips”… Spritz with cooking spray or oil and lightly salt or season before baking on parchment paper at 450 for 2-3 minutes. Allow to cool (they’ll crisp completely upon cooling) and enjoy!
