How to Hotpot at Home! You do need some special equipment to have a hot pot meal at home. Let’s start with the essential gear. NECESSARY EQUIPMENT FOR HOT POT: Heat Source: We have a specialized electric hot pot burner that comes with a pot. However, any portable heat source will work. You could use an electric burner (coil or induction) or a tabletop gas burner. If you plan on making hot pot a regular event, we do recommend getting a hot pot set with a built-in electrical heating element—the pot is removable for easy cleaning. Pot: Chinese stainless steel hot pots are ideal because of their round shape and depth—wide and deep enough to hold a good amount of food, while not being so deep that the food gets lost at the bottom. The metal is rather thin, which allows the simmering soup to heat up quickly as additional ingredients are added. Some designs even have a “yin-yang” feature, where you can have two soup flavors simmering at the same time. However, any wide, relatively shallow pot will work. Chopsticks: Chopsticks offer superior dexterity when it comes to retrieving food items. Hot Pot is best eaten with bamboo chopsticks or wooden chopsticks, which are heat resistant and cool off quickly. Plastic and metal chopsticks aren’t ideal. Plastic can melt at high temperatures, and metal conducts heat. Wouldn’t want to burn yourself on them! ADDITIONAL EQUIPMENT: Sauce Bowls: You’ll need small bowls (Chinese rice bowls work great) for each person to assemble their own dipping sauce. Metal hot pot baskets/wire ladles: It’s not completely necessary, but metal hot pot ladles are basically wire sieves with wide holes. You nestle the food in the small wire cup, and the boiling liquid circulates around the food to cook it through. Then you simply lift it up to tip the food tidily into your bowl. It also acts as a sort of “net” to catch other tasty morsels from the pot.

But when we came across these TikTok videos of a Filipino cook treating his multi-racial workmates to his own cooking—from his take on sisig to pansit to bistek—we thought, hey, these we like. Welcome to Chuckie’s Kitchen. It’s a vlog run by Dexter Chuck Reyes Tiongson, 28, a friendly, lanky Valenzuela-born fellow now doing the grind in a big Italian restaurant in Kansas City, Missouri. His videos are a combination cooking tutorial and, yes, reaction shots but there’s also something endearing about this Pinoy cook in a foreign land sharing a bit of his culture to his workmates, showcasing the full experience of enjoying food the Filipino way—cooking it with lots of love, a bit of improv here and there, and enjoying the results with one’s closest and dearest.

A Simple, Delicious Roasted Carrots Recipe Everyone knows that it's a particularly difficult task to get young children to eat their vegetables, but what about enticing grown adults to pick up a carrot or two after a long day? OK, we admit it, sometimes it's not the most appetizing thing on the menu, or even at the grocery store, especially after a particularly exhausting or stressful day. But here in this simple and easy to make roasted carrots recipe, we provide you with a deliciously flavorful way to make your vegetables a bit more enticing. Anytime you roast something, it teases out the inherent sweetness. You're probably picturing a sweet and juicy roast beef, but it turns out, the same principle works especially well in vegetables. As you roast a given vegetable, its water content slowly starts to evaporate, and in turn, its natural sugars become more concentrated, making for something considerably more enjoyable (and mouthwatering, for that matter) to eat than, say, a raw carrot. 8 medium-size carrots, tops removed, peeled 1 Tbsp olive oil 2 Tbsp honey 1⁄2 Tbsp fresh thyme leaves (optional) Salt and pepper to taste HOW TO MAKE IT Preheat oven to 400°F. Toss carrots with olive oil, honey, thyme leaves (if using), and a generous amount of salt and pepper. Spread out on a baking sheet and cook in the oven until brown on the outside and tender all the way through, about 35 minutes.

LET'S GO HEALTHY! What Is a Pescatarian and What Are the Benefits of a Pescatarian Diet? Some pescatarians believe a meat-based diet is bad for the environment. They feel that land animals raised for food use too many natural resources and add to pollution. Many people, though, choose this fish-based plan for their health. A diet that puts an emphasis on plant-based foods, fish, and seafood may provide health benefits. Fish, like meat, is a good source of protein. Yet, unlike red meat, it's low in saturated fat and often rich in healthy omega-3 fatty acids. Studies show that eating less red meat, or none at all, lowers your chances of getting heart disease and high blood pressure. At the same time, two servings of fish a week may help your heart. The omega-3 acids in fatty fish like salmon and mackerel help lessen plaque that builds up in arteries and lower your odds of getting an irregular heartbeat (arrhythmia). Omega-3s also lower triglyceride levels in your blood, another bonus for heart health. The healthy fats may even have a positive effect on blood pressure. Limiting red meat or cutting it out of our diet completely may also lower your chances of getting cancer. One study shows that pescatarians live longer than people who follow a diet that includes red meat and poultry. If you go pescatarian, consider choosing lower-mercury types of fish, like salmon, mackerel, herring, sardines, and lake trout.

The Perfect Burger Simple purity — it's a burger not a meatloaf. First, it’s about the beef, and not about all the spices and goodies that are often ground into the meat. Everyone has their secret ratio and favorite cuts, my best advice is addition by subtraction. Fresh, high-quality ground beef and salt and black pepper. While monster nine-ounce burgers have their place, I prefer a thinner patty, about five ounces To me, a great burger should have an equal amount of "crumble" and "stability". Meaning it should hold together enough to allow you to cook them correctly, (from edge to edge) and the guest should be able to take a bite without it falling apart. As with many cooks, I like both the charcoal-grilled as well as seared on a griddle/pan for a variety of different reasons. So my fellow culinary nerd friends and I devised a plan to get the best of both. Because fat absorbs aromas so well, we first charred beef fat directly on hot hardwood charcoal embers, then we smoked it for several hours. We then chilled the fat and then ground it into the meat. Achieving an inside out char grilled flavor evenly distributed throughout the meat. (Yes, its a lot of extra work.) Other Essentials: warm, tender bun, Heinz ketchup, French’s yellow mustard, and Mt. Olive pickles — accept no substitutes.

Heat wine in a fondue pot over medium heat until it starts to bubble, about 6 minutes. Step 2 Stir in cheese mixture, a little at a time. Stir in kirsch. Continue to cook, stirring, until cheese has melted, 6 minutes. Stir in lemon juice. The mixture should be smooth and almost bubbling. Transfer pot to its stand set over a burner for up to 1 hour. Chicken, Cheese, and Wine Directions Preheat an oven to 350 degrees F (175 degrees C). Layer the chicken breast halves into the bottom of a baking dish. Stir the cream of mushroom soup, mushrooms, garlic, curry powder, salt, and black pepper together in a bowl until mixed. Add the white wine to the soup mixture and stir until smooth; pour over the chicken breast halves. Sprinkle the Cheddar cheese and paprika over the mixture. Bake in the preheated oven until the chicken is no longer pink in the center and the juices run clear, about 90 minutes. An instant-read thermometer inserted into the center of a chicken breast should read at least 165 degrees F (74 degrees C).

DIRECTIONS In a medium bowl, combine the chicken, 1 teaspoon rice wine, the cornstarch, 1/4 teaspoon salt, and the white pepper. In a small bowl, combine the black soy sauce, vinegar, sesame oil, sugar, chile oil, broth, the remaining 2 teaspoons rice wine, and the remaining 1/2 teaspoon salt. Heat a 14-inch flat-bottomed wok over high heat until a bead of water vaporizes within 1 to 2 seconds of contact. Swirl in the vegetable oil, add the dried chiles, and carefully add the chicken, spreading it evenly in the wok. Cook undisturbed 1 minute, until the chicken begins to brown. Then, using a metal spatula, stir-fry 1 to 2 minutes or until the chicken is browned on all sides but not cooked through. Transfer to a plate and set aside. Add the ginger, garlic, ground Sichuan peppercorns, and scallion to the dry wok and stir-fry for 15 seconds. Return the chicken to the wok and toss to coat. Stir the sauce mixture and carefully swirl it into the wok and stir-fry 30 seconds or until the chicken is just cooked through and the sauce is slightly thickened. Remove and discard the chiles. Serve immediately.

How to Pan Sear Steaks: Pat dry – use paper towels to pat the steaks dry to get a perfect sear and reduce oil splatter. Season generously – just before cooking steaks, sprinkle both sides liberally with salt and pepper. Preheat the pan on medium and brush with oil. Using just 1/2 Tbsp oil reduces splatter. Sear steaks – add steaks and sear each side 3-4 minutes until a brown crust has formed then use tongs to turn steaks on their sides and sear edges (1 min per edge). Add butter and aromatics – melt in butter with quartered garlic cloves and rosemary sprigs. Tilt pan to spoon garlic butter over steaks and cook to your desired doneness (see chart below). Remove steak and rest 10 minutes before slicing against the grain.

How to Make Grilled Cheese Butter the toast – spread 1/2 Tbsp butter on one side of each slice of bread. Heat skillet – place a skillet over low to medium/low heat. A griddle should be at 275˚F. Immediately add 2 slices of bread with the butter-side-down. Add cheese – stack cheeses on one of the pieces of bread, cover with the other piece of toast and flip the sandwich over. Brown the toast – Continue sauteeing, flipping once, until both sides are golden brown and cheese is melted. Serve – cut the sandwich in half on the diagonal to serve.

5 Dishes that Currently Define the PH: Filipino food may not be as famous as that of its Thai and Vietnamese neighbors. But with more than 7,000 islands and a colorful history, this archipelago has some delicious dishes of its own. Blessed with an abundance of seafood, tropical fruits and creative cooks, there's more to Filipino food than the mind-boggling balut (duck embryo). You just have to know where to find them and how to eat them. 1. Adobo No list of Filipino food would be complete without adobo. A ubiquitous dish in every household in the Philippines, it's Mexican in origin. But Filipinos found that cooking meat (often chicken and pork) in vinegar, salt, garlic, pepper, soy sauce and other spices was a practical way to preserve it without refrigeration. This cooking style can be applied to different meats or even seafood. It's best sample it in a Filipino home, but the garlicky version of the lamb adobo can be found at Abe restaurant in Taguig. Abe Serendra, Serendra Plaza Serendra Plaza, Taguig City, Luzon Philippines; 2. Lechon The lechon is the most invited party guest in the Philippines. The entire pig is spit-roasted over coals, with the crisp, golden-brown skin served with liver sauce, the most coveted part. In Cebu, the stomach of the pig is stuffed with star anise, pepper, spring onions, laurel leaves and lemongrass resulting in an extremely tasty lechon, which needs no sauce. In Manila, folks can get their piggy from Elar's Lechon, while in Cebu, the best is CnT Lechon. 3. Sisig Nothing goes to waste in Filipino food. In the culinary capital of Pampanga, they turn the pork's cheeks, head and liver into a sizzling dish called Sisig. The crunchy and chewy texture of this appetizer is a perfect match for a cold beer. Serve with hot sauce and Knorr seasoning to suit the preference of you and your buddies. Credit goes to Aling Lucing, who invented this dish at a humble stall along the train railways in Angeles City, Pampanga. Crispy pata Not for the easily spooked, this pork knuckle is simmered, drained and deep fried until crisp. The meat is tender and juicy inside, with a crisp, crackling exterior. Every part of the chicken is grilled here from the paa (drumstick), pecho (breast), baticulon (gizzard), atay (liver), pakpak (wings) and corazon (heart). It must be eaten with a generous serving of garlic rice, with some of the orange oil used to marinade the chicken poured over the rice.
